In this presentation, Cindy H Carroll will discuss the relationship between the gut microbiome, digestive health, inflammation, and the risk for CVD. She will review the biomarkers to assess risk and nutritional considerations.

10:45-12:15 pm: Presentation and Practice: New Swallow Screen Competency.
In this session, Kate Walker will discuss the dietitian’s role as a reliable advocate for swallow function testing. Included will be validated, swallow screening tools that dietitians may incorporate into their daily practice including the EAT-10 and Yale Swallow Protocol. Additionally, Kate will review practice considerations for swallow-function-centered NFPE including oral exam and cranial nerve function screen.

Learning Objectives: Cardiovascular Health by Way of the Gut
- Describe the relationship between gut permeability, the gut microbiome, inflammation and CVD.
- Describe endo-toxemia and its link to insulin resistance, Type 2 diabetes, MetS, NAFLD/NASH and CVD.
- State the significance of LPS as it relates to LDL cholesterol, inflammation and cardiovascular risk and how to measure it.
Speaker BIO: Cindy is a registered dietitian, sports nutritionist and a registered nurse, and a former
dental hygienist. She has been in healthcare over 35 years and owns two nutrition
related businesses: Institute For Functional Nutrition & Systems Biology, and her private
practice, Nutrition To Fit You. The Institute For Functional Nutrition provides nutrition
professionals, both in the media and in clinical care, a successful approach for applying
functional nutrition using a systems biology mindset.
Cindy has a Master of Science degree in Nutrition from Massachusetts General
Hospital’s Institute of Health Professions with a focus in nutritional biochemistry and
sports nutrition. Her early experience with athletes laid the foundation for much of what
she does in her career today. She has worked in both organized medicine and as a
consultant for a variety of corporations and institutions including: Massachusetts
General Hospital in Boston, the US military and USA Swimming. She’s also authored
two sport nutrition text book chapters for SCANs Professional manual 2000 ed, as well
as her book, The Seductive Land of Carbs. Cindy is now serving on the DIFM’s board
as the new research chairperson.
Currently, Cindy offers a 70-CEU Commission of Dietetic approved, recorded course
called, Nutrition and Systems Biology: A Review of Eight System.

- Increase knowledge and confidence in using validated tools and physical assessment skills to identify patients who are at risk for swallowing dysfunction.

- Improve efficiency and effectiveness of collaborative care with Speech and Language Pathologists.

- Improve understanding of the newly added 2022 ACEND dietetic internship competency, CRDN 3.6, Conduct a swallow screen and refer to the appropriate health care professional for full swallow evaluation when needed.
- Sphere 1 (Ethics) 1.1 Demonstrates and maintains competence in practice.
Speaker Bio: Kate Walker, MDA, RDN, LDN, CSG is an Assistant Professor of Practice at Simmons University and the clinical instructor for the Simmons Dietetic Internship. In her current role at Simmons and as a contracted trainer for the AND Nutrition Focused Physical Exam Workshop, Kate has many years of experience teaching advanced clinical assessment skills around the US and internationally. She is passionate about empowering nutrition professionals to expand their scopes, where it makes sense, to provide the highest quality care possible for patients. Kate is a CDR Certified Specialist of Gerontology with over 10 years experience as a clinical dietitian in acute, subacute and long-term care levels. She continues to work as a clinical dietitian and dietetic internship preceptor at multiple Boston area community hospitals.
